With the fastest delivery I received this manchego, perfectly boxed surrounded by dry ice to keep it from molding Thank-you. I truly enjoy all sheep's milk cheese. I must say Dao Gourmet Foods or Carmen & Lola Eat España did a well deserved professional job. Ideally a Purveyor or Cheese Monger knows to turn the wheel consistently weekly to evenly distribute the moisture and keep the cheese consistent in texture. They know Cheese should be stored at no higher than 56F. Products placed in a store window in direct sunlight or on a warehouse shelf with no air conditioning can affected, the quality and consistency of the end product can be compromised. Adhering to these conventions is labor-intensive and costly - however, reputation is everything with so many online competitors now in the marketplace. Ideally, the lead time should be 9 months - I have no qualms about receiving a wheel of cheese with only 6 months until expiration. I cut the wheel of this 3 month old Manchego and observed it was darker/dryer next to the rind all around upwards of 1/8 inch, it had the odor of parmesan and the taste of swiss.- reminiscent of a much more expensive 6, 12, month or even 2 year aged Manchego The fresh 3 month old manchego I have grown to love is consistently smooth, mild, and so buttery it almost melts in your mouth. This cheese had none of these qualities - What went wrong?. No matter what the temperature of the cheese I found Slicing with a cheese plane left a crumbly mess.
